Save Stations are scattered all about the USG Ishimura and Titan Station and are important in progressing through the games. Gameplay-wise, they save your game at wherever you find them.
It is possible that they are control panels, as evidenced from when Nathan McNeill used one to deactivate ADS Cannon 47. Another possibility is that they are publicly open multi-purpose computer terminals; at least one of them has a telephone sign next to it, indicating that they might be used for communication.
